Grape Brandy is a spirit produced from min. 50% wine distilled at less than 86% vol. with or without the addition of wine alcohol distilled at less than 94.8% vol.
The spirit matures for at least one year in oak casks or for at least six months in oak casks with a capacity of less than 1,000 litres.
We typically supply brandy aged for 6 months, 12 months, 3 years and 5 years or classified as VSOP
. Alternatively, we also supply unaged eau-de-vie de vin
In addition we can also supply bottled brandy and bottled Cognac.
Our Distillation Department in France
is equipped with several devices using different techniques combining high technology with tradition to allow for the production of a wide variety of brandies and distillates. Our know-how has been inherited from many years of distillation. Use of automatic control and efficient regulation, allow the production of brandies and distillates that meet the most demanding analytical and organoleptic criteria.
Copper stills with totally 40,000 litres capacity allow us to offer batch distillation. This traditional method provides distillates of great finesse, for which wines are specially selected for their aromatic character.
Larger volume is available from continuous distillation columns with a capacity exceeding 100,000 litres of pure alcohol per day. They are composed of different columns, built mainly of copper. Depending on the quality of grape wine used, they allow us to make a wide variety of brandies and wine distillates. The vigilant distiller, in collaboration with our laboratory, monitors and ensures the quality of our production.
From Spain, we supply Brandy de Jerez aged from 6 months to 5 years. Brandy de Jerez must be supplied at 40% vol. according to the stipulations of the Consejo Regulador, the entity responsible for ensuring compliance with the Regulations of the Specific Denomination "Brandy de Jerez".
Brandy de Jerez differs from other brandies as it possesses certain specific, unique organoleptic characteristics as a consequence of its traditional production system and the characteristics of the wooden casks in which it is aged and, naturally, of the characteristic climatic conditions exclusive to the geographical area in which it is produced:
- Aged in American oak-wood casks with a capacity of 500 litres, previously having contained Sherry Wine.
- The sue of the traditional ageing system of Criaderas and Soleras.
- Aged exclusively within the municipal boundaries of Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda, in the province of Cádiz.
